Italian cuisine in Las Vegas has come a long way over the past few decades. Sure, we still have the type of red sauce joints the Rat Pack loved. But the best of them have been elevated to a higher level by chefs who show respect for those classic dishes by making them with high-end ingredients and impeccable technique. And they’re joined by an impressive collection restaurants — large and small, casual to formal – that honor other Italian culinary traditions. Even off The Strip, you can find fantastic interpretations of Italy’s many regional cuisines, as well as Italian American traditions from both coasts.
